HORSERADISH
                 
We offer just 5 items by mail order that we do not grow from seed, but by root cuttings. These are Comfrey, French Tarragon, Horseradish, Mint and Tree Onion. These can be ordered and paid for with your order for seed. Seed will be sent to you straightaway, while any root cuttings ordered will be sent separately during April/May for immediate planting. Three to five roots for £6.00 per variety.
Armoracia rusticana Horseradish is a perennial herb grown for its pungent roots which are usually grated and combined with oil and vinegar, or with cream. It develops into a clump of large leaves with serrated edges, and occasioally sends up white flowers. It forms long white fleshy roots. Best grown in fertile stone-free soil in a sunny position.
 

Horseradish Sauce
Care must be taken when making this hot sauce. Do not touch your face or taste the grated root before the sauce is complete.
2 tablespoons grated horseradish root
1 tablespoon white wine vinegar or lemon juice
2 teaspoons castor sugar
Salt and pepper to taste
Mixed mustard to taste (optional)
1/4 pint cream
Mix all the ingredients except the cream. Half whip the cream. Lightly fold the horseradish mixture into the cream. Serve the sauce very cold. It can be chilled in a refrigerator and served semi-solid.
More pungent than bought sauce. Eat sparingly.

 

CULTIVATION Plant root in spring 5cm deep in fairly rich, well-weeded soil in trenches 60-90cm deep with plenty of manure. Trim off lateral roots in late spring to encourage a good thick strong root for harvesting in the autumn. Roots can be stored for future use in a damp dark place and used fresh as needed.

 
 
When you receive your roots in the post...open the package immediately, and plant each piece of root in a 13cm plastic pot in soil-based compost. Place outside in the sun and keep watered. After a couple of months, plant out in the garden or on the allotment and water in. Can be planted straight in the ground. Armoracia rusticana
