French
Tarragon is a tender perennial in the UK. It does
not flower and therefore does not come from seed.
Used in lots of dishes including chicken, fish and
salads. As there is no leaf to harvest in the winter,
making Tarragon vinegar in summer for storing for
later use is a good idea. |

TARRAGON
VINEGAR
Pick lots of leaves in the summer and stuff them
into a wide-necked glass jar. Pour on white wine
vinegar to completely submerge all the leaves. Keep
the wine vinegar bottle without washing it out.
Leave on a sunny windowsill for three weeks, shaking
the jar every day. Sieve out the leaves. (You can
repeat this process if you want a stronger flavoured
vinegar.) Pour back into the original bottle and
label. Store in a cool dark place. |

CULTIVATION
Leave
your French Tarragon in a pot all the time, and
feed every six weeks throughout the growing season.
In October place the pot in a cool but frost-free
place, such as a garage. It does not need light
as there will be no leaves showing in the winter.
Keep the compost rather dry during the winter though
not completely dried out. At the end of March, repot
and water your French Tarragon. Gradually bring
outside into the sun again after all danger of frost.
Harvest with scissors by snipping whole sprigs off
each stem. |

When
you receive your roots in the post.....
open
the package immediately, and plant the root
ball in a 13cm plastic pot in good quality
John Innes No. 2 potting compost. Place outside
in the sun and water regularly in the morning.
After a couple of months, pot on to a larger
pot. |
